Can I get more conventional mortgages to help pay a bigger mortgage?

No, taking out these other mortgages is not permissible. Getting into a mortgage contract is sinful, due to the contract involving interest, The Messenger of Allah (Allah bless him and give him peace) told us that Allah has cursed those who give or take interest, those who document the transaction, and those who witness it. [Muslim]

I would be much better for you to go with the Shari’a compliant option. It might be more expensive, and setting it up might be more complicated, but at least you can tell Allah, on the Day of Judgement, that you tried to avoid interest in this situation. This life is a test, and part of the test is putting up with difficult situations to please Allah.

Turn in repentance to Allah for the first mortgage, and ask him to facilitate a way to pay the current one off. You will see good come to you.
